Lemongrass Margarita    Makes 1

Lemongrass Syrup

3 lemongrass stalks, beaten with the back of a knife and roughly chopped
1 cup sugar
1 cup water

Margarita

45 mL white tequila
30 mL lemongrass syrup
30 mL triple sec
squeeze of fresh lime juice
Ice
Coarse sugar to rim your glass

To make the Lemongrass Syrup:

Combine the lemongrass, sugar, and water in a small saucepan over high heat, stir until the sugar is dissolved. Remove from the heat and let steep for 30 minutes. Pour the mixture through a fine mesh sieve and into a small jug and discard the solids. Store this in the fridge so you are ready to make your margarita at any time. (This syrup is a great mixer for other drinks too, add a little to a Gin and Tonic)

Assemble your Margarita:

Combine the tequila, lemongrass syrup, lime juice, and triple sec in a cocktail shaker filled with ice and shake for about 30 seconds, until cold. Strain into a sugar-rimmed glass filled with ice and serve.
